White Chocolate Oatmeal Cookies

Makes ten cookies

Dry Ingredients:

  • 1 cup Avelina rolled oats
  • 1 Tablespoon ground flax seeds
  • 1 Tablespoon vanilla extract
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1⁄2 teaspoon ground ginger
  • 1⁄4 teaspoon ground clove
  • 1⁄6 teaspoon ground nutmeg

Wet Ingredients:

  • 1/2 cup pure maple syrup
  • 1/3 cup almond butter
  • 1/3 cup applesauce
  • 1/4 cup non-dairy milk

Mix-Ins

  • 1 cup Avelina rolled oats
  • 1/3 cup dried cranberries
  • 1/3 cup non-dairy white chocolate chips
  • 1/3 cup macadamia nuts

Chewy oatmeal cookies packed with raisins and white chocolate chips are healthy, easy to make and your family will love the multi flavor experience.

Preparation:

  1. Preheat the oven to 350F and line a cookie sheet.
  2. Add 1 cup of Avelina rolled oats to a blender and pulse to a flour form. Add the rest of the dry ingredients and combine.
  3. Add the wet ingredients to the blender and blend until a smooth batter forms.
  4. Add the mix-ins and stir with a spatula (Do not blend the mix-ins into the batter).
  5. Place the batter in the refrigerator for 20 minutes to chill.
  6. Spoon the batter onto the cookie sheet and bake for 8-12 minutes, or until lightly golden-brown.
  7. Remove the cookies from the oven and cool on a wire rack. Store in the refrigerator in an
    airtight container for up to a week.
