White Chocolate Oatmeal Cookies

Time: 45 minutes
Makes ten cookies
Dry Ingredients:
- 1 cup Avelina rolled oats
- 1 Tablespoon ground flax seeds
- 1 Tablespoon vanilla extract
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1⁄2 teaspoon ground ginger
- 1⁄4 teaspoon ground clove
- 1⁄6 teaspoon ground nutmeg
Wet Ingredients:
- 1/2 cup pure maple syrup
- 1/3 cup almond butter
- 1/3 cup applesauce
- 1/4 cup non-dairy milk
Mix-Ins
- 1 cup Avelina rolled oats
- 1/3 cup dried cranberries
- 1/3 cup non-dairy white chocolate chips
- 1/3 cup macadamia nuts
Chewy oatmeal cookies packed with raisins and white chocolate chips are healthy, easy to make and your family will love the multi flavor experience.
Preparation:
- Preheat the oven to 350F and line a cookie sheet.
- Add 1 cup of Avelina rolled oats to a blender and pulse to a flour form. Add the rest of the dry ingredients and combine.
- Add the wet ingredients to the blender and blend until a smooth batter forms.
- Add the mix-ins and stir with a spatula (Do not blend the mix-ins into the batter).
- Place the batter in the refrigerator for 20 minutes to chill.
- Spoon the batter onto the cookie sheet and bake for 8-12 minutes, or until lightly golden-brown.
- Remove the cookies from the oven and cool on a wire rack. Store in the refrigerator in an
airtight container for up to a week.
